    Kale and Potato Tacos

    Whip up a delightful vegan dish, a meatless kale and potato taco with a quick and easy zesty tomato salsa. 


    Ingredients

    plum tomatoes
    1/4
    onion, chopped

    cloves
    garlic

    tablespoon
    Olive Oil

    potatoes, cubed
    1
    bundle
    kale, washed, stemmed, and diced
    1
    serrano chile
    1/2
    teaspoon
    salt

    freshly ground black pepper, to taste

    corn tortillas
    Directions
    Blend the tomato, onion and garlic with 1/4 cup of water.
    Heat oil in a large skillet with a lid. When hot add the potatoes, kale, and tomato mixture. Put the whole serrano chile, just to add a layer of extra flavor. Season with salt and pepper to taste.
    Cover the pan and let simmer until the potatoes are cooked. Then fill tortillas.
