Preheat your oven to 350 degrees and grease your muffin tin.
In a bowl, gently combine your peaches, ¼ teaspoon cinnamon, granulated sugar, and 2 tablespoons of flour. Set aside.
In a large bowl, whisk together the butter, brown sugar, and vanilla extract until light and fluffy.
Add the remaining flour, salt, cinnamon, baking powder and mix to combine. It may look crumbly but should come together when pressed.
Spoon a packed tablespoon of dough into the bottom of 10 muffin tins and press until flat. Distribute the peaches evenly on top of the dough. Add oats into the remaining dough and crumble large chunks of the dough on top of the peaches.
Bake for 35-40 minutes or until golden brown. Let cool in the pan for 30 minutes or until room temperature.
