    Holiday Spirit Rum and Ginger Cocktail

    Celebrate the holidays with this ruby red cranberry, ginger, and rum cocktail from Sweet Hospitality Group, the premiere concessionaire and caterers for on- and off-Broadway shows. 


    Ingredients
    For the Cranberry Fig Shrub

    balsamic vinegar
    1/2
    cup
    brown sugar

    cups
    unsweetened cranberry juice

    dried Black Mission figs, coarsely chopped

    sprigs
    fresh rosemary

    tablespoon
    Black Peppercorns
    For the Cocktail
    2
    ounces
    10 Cane Rum
    1
    ounce
    ruby port
    3
    ounces
    cranberry fig shrub
    *
    ginger beer and seltzer
    Directions
    To Make the Cranberry-Fig Shrub: Combine 1 cup water, balsamic vinegar, and sugars and whisk or shake until mostly dissolved. Add cranberry juice, figs, rosemary, and peppercorns and mix well to combine. Refrigerate for 24-48 hours and strain to remove solids before using
    To make cocktail: Fill a 16 ounce glass with ice, add rum, port, and shrub, and top with half ginger and seltzer to fill.
