    Heart-Healthy Vegan Avocado Ceviche

    Not all that is Ceviche involves fish! Cauliflower usurps fish in this bright, but balanced ceviche recipe for an appetizer that is sure to leave people wanting more.

    ripe avocado (halved, pitted, peeled, and diced)

    cauliflower (diced)
    1/3
    cup
    red onion (diced)

    tablespoon
    jalapeño, diced

    tomatoes (diced)

    clove
    garlic (minced)

    tablespoon
    fresh cilantro (chopped)

    tablespoon
    Lime Juice
    1/4
    teaspoon
    salt

    tablespoon
    Olive Oil
    Directions
    In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeño, garlic, cilantro, lime juice, salt and olive oil.
    Transfer to a serving bowl. Serve with homemade pita chips.
