    Hacienda Zuleta's Quinoa Soup

    This creamy, nourishing Quinoa Soup from Hacienda Zuleta will warm your body after a long day. It's a classic family recipe that both meat lovers and vegetarians can appreciate.

    Directions
    Put water in a pot, bring to the boil.
    Add the quinoa and cover the pot. Stir occasionally and cook for about 1-1.5 hours or until the grain is soft.
    In a frying pan, melt butter with onions, cook until onions are transparent.
    When the quinoa is ready, add onions and half the cream and let boil for about 5 minutes, reduce heat and simmer.
    While the quinoa is simmering, combine the remaining cream, milk, egg yolks, and cheese in the blender, and mix for 1 minute.
    Add this mixture to the soup right before serving, stir, and serve immediately.
