    Guacamole with Grilled Pineapple Pico de Gallo and Fried Pork Rinds

    Update your guacamole recipe with the addition of tropical and sweet grilled pineapple pico de gallo and crunchy, salty fried pork rinds. 


    Ingredients
    For the Grilled Pineapple Pico de Gallo

    For the Guacamole

    ripe avocados, seeded and peeled

    limes, juice only

    medium tomatoes, chopped

    medium white onion, finely chopped

    Directions
    Make the grilled pineapple pico de gallo: Grill the Pineapples and dice. Dice up equal quantities of onion and tomato. Roughly chop the cilantro. Finely chop jalapenos, discarding seeds to moderate heat. Mix all ingredients in a bowl. Add lime juice and salt, to taste.
    Make guacamole: Place avocados in a bowl and mash with a fork. Mix in remaining ingredients except for grilled pineapple pico de gallo. Combine well. Then top with pico de gallo, serve immediately with pork rinds.
