    Grilled Pork Tacos with Mango Salsa

    mango, diced

    plum tomatoes, diced

    Fresh cilantro

    jalapeño pepper, seeded and finely chopped

    paprika
    1/4

    salt

    cloves garlic, minced
    1 1/2
    teaspoons
    chipotle seasoning
    1 1/4
    pounds
    pork tenderloin, trimmed

    tablespoon
    Olive Oil

    6-inch sof tortillas
    1
    cup
    lettuce, shredded
    Directions
    In a bowl, stir together mango, tomatoes, cilantro, and jalapeño. Set aside.
    In a small bowl, mix paprika, salt, garlic, and chipotle seasoning. Rub all over pork and drizzle with oil.
    Grill pork 25 minutes, turning occasionally, or until thermometer inserted in center Reaches 145°F and juices run clear. Let stand 10 minutes before slicing. Cut pork into thin slices.
    Stack tortillas and wrap in foil. Place tortillas on cool corner of grill to warm 10 minutes. Remove tortillas from foil and place on work surface.
    Arrange pork in center of each tortilla. Top with lettuce and mango salsa.
