Place all ingredients for the mango sauce in a blender or food processor and puree till smooth. Then set aside on stove top in a small sauce pot on low heat so it cooks through and thickens.
Start by preheating your grill on medium-high heat and oil if using a cast iron grill skillet. Season your pork chops with salt, pepper, cumin, and lime juice. Rub on all sides of the chops.
Once the grill is hot, place the chops on the grill. Cook on each side for 3-4 minutes or until cooked thoroughly without moving it. The less you touch the chops the juicier it will be.
Place chops on a plate and top with the warm mango sauce. Garnish with cilantro and serve with white rice and a salad.
