    Grilled Mallard Duck

    “While the main dish during the holidays is usually roast pork served along with arroz con gandules, plátanos, and pasteles, many people are going towards the grilled duck,” says chef Maria Germania Diaz. “Friends and relatives begin arriving later in the morning (this is an all day party) and while the duck is grilling there is lots of holiday music. Older women will be in the kitchen cooking side dishes that will accompany the duck. Children will be playing tag and getting in trouble. Guests bring traditional holiday desserts.”

    Ingredients
    For the Duck
    4
    mallard duck breast
    1
    teaspoon
    smoked paprika
    1
    teaspoon
    dry mustard
    2
    teaspoons
    hoisin sauce
    2
    teaspoons
    brown sugar
    For the Sofrito
    1/4
    medium yellow onion, cut into large chunks
    1/2
    cubanelle pepper
    4
    cloves
    garlic, peeled
    4
    leaves
    cilantro
    2
    ajices dulces (Latin sweet peppers)
    1/4
    plum tomato, cored and cut into chunks
    For the Guava Sauce
    4
    ounces
    guava paste
    1/2
    cup
    guava juice
    1
    ounce
    red wine
    2
    tablespoons
    honey
    1/4
    teaspoon
    salt
    Directions
    Put everything in the food processor until smooth.
    
Mix together all marinade ingredients in a small bowl.
    Coat with mixture,
 cover, and marinate in refrigerator overnight.
    Let duck reach
 room temperature before grilling.

    Preheat grill for medium-high temperature.
    Place duck onto grill
 skin side down.
    Cook for 5 to 7 minutes, turn and cook for an additional 5 to 7
minutes.
    To make guava sauce: Cut the guava paste in diced, mixing all ingredients together and simmering in low 
temperature for about 15 minutes.
    Remove and serve
 with guava sauce.
