    Grilled Mahi Mahi Tacos

    Grilled Fish Tacos with Mahi Mahi are a Baja California classic! They're quick and easy to prep: just grilled fish in warm tortillas with a fresh and bright pico de gallo and creamy guacamole. 


    Ingredients
    *
    salt and peper to taste

    pounds
    Mahi Mahi filets (cut lengthwise into smaller pieces)
    1
    tablespoon
    vegetable oil
    1 1/2
    cups
    crumbled Cello Parmesan Whisps
    8
    6-inch corn tortillas
    *
    pico de gallo
    *
    guacamole
    1/4
    cup
    red onion, diced for garnish
    *
    fresh cilantro, for garnish

    lime wedges
    Directions
    Season both sides of the fish filets with salt and pepper.
    Heat oil in a large cast-iron skillet, or sauté pan, over medium-high heat, add fish to pan and cook 2-3 minutes on each side, or until desired degree of doneness.
    Roll cooked fish in Cello Parmesan Whisp crumbles.
    Warm tortillas in a skillet or oven.
    Divide fish evenly among warm tortillas.
    Top with pico de gallo, guacamole, red onion, cilantro, and serve with lime wedges.
