    Grilled Lime, Scallop & Plantain Skewers

    This Latin twist on seafood kebabs is an unexpected delight.


    Ingredients
    16
    jumbo scallops
    2
    extra ripe plantains, sliced into medallions
    3
    limes, wedged

    olive oil to taste
    *
    salt and pepper to taste
    *
    Alternately, use a lime-infused sea salt.
    Directions
    Soak wooden skewers in water for 30 minutes before grilling to keep the sticks from over-scorching.
    Thread skewers with scallops, plantains and lime wedges in alternating order.
    Brush with olive oil, then salt-and-pepper the scallops and plantains.
    Grill for 5 minutes on each side or until scallop centers turn opaque.
    Serve with a squeeze of lime.
