    Grilled Lemon And Garlic T-Bone Lamb Chops

    Lemon and garlic are a natural pairing for lamb. Marinating the chops with their bright flavors brings out the meat's richness.


    Ingredients

    T-bone lamb chops, each about 1 inch thick
    1/2
    cup
    extra-virgin olive oil

    tablespoons
    country-style dijon mustard
    1/4
    cup
    fresh lemon juice

    tablespoons
    finely grated lemon zest

    tablespoons
    kosher salt

    teaspoon
    smoked paprika

    cloves
    garlic, minced
    1
    shallot, minced
    1/4
    cup
    flat-leaf parsley, chopped

    freshly ground black pepper to taste
    Directions
    Pulse all but the lamb chops in a food processor.
    Rub the lamb chops with the mixture.
    Cover and let marinate for at least 45 minutes.
    Preheat the grill to high.
    Bring the lamb chops to room temperature, shake off the lamb chops and sprinkle with a little more salt and pepper.
    Place on the grill and cook about 4 minutes with lid open, flip them and cook for another 4-5 minutes. For medium rare, internal temperature should reach 130 degrees.
    Remove from grill & let the meat rest for 5 minutes.
