    Green Protein Salad

    Green Protein Salad combines creamy avocado with protein rich chickpeas, bright green peppers, juicy zucchini, and roasted pistachios on a bed of spinach for a dish that is delicious and satisfying.


    Ingredients

    avocado, pitted with flesh removed

    avocado oil

    tablespoon
    Lime Juice

    sea salt

    black pepper

    red pepper flakes

    15 ounce can chickpeas, rinsed
    1
    green pepper, minced
    1/2
    cup
    roasted shelled salted pistachios
    1
    cup
    minced zucchini
    4
    cups
    chopped spinach
    Directions
    In a large bowl combine avocado, oil, lime juice, sea salt, black pepper, and red pepper flakes. Using a fork, mash avocado with ingredients until a thick dressing forms.
    Add garbanzo beans, green pepper, pistachios and zucchini to bowl. Fold in ingredients until each is coated in dressing.
    Divide spinach among 4 bowls and top each bowl with 1/4 of dressed salad. Garnish with diced tomato, salsa, or chopped cilantro.
