    Flora Farms' Roasted Beet Carpaccio with Fromage Blanc

    This roasted beet carpaccio with creamy fresh cheese is a classic starter at Flora’s Field Kitchen.  Serve it cold with a fresh baguette.

    Ingredients
    3-4
    large beets, roasted in oven until tender, ccoled and peeled
    1/2
    cup
    goat cheese
    1/2
    cup
    cream cheese or ricotta
    drizzle
    Olive Oil
    squeeze
    lemon
    *
    chives for garnish
    *
    salt and pepper to taste
    Directions
    Roast the beets in the oven until tender; cool and peel.
    Slice on mandoline very thinly and arrange on platter or plate.
    Mix goat cheese and cream cheese or ricotta and place in the center of beets.
    Drizzle olive oil and a squeeze of lemon over all.
    Salt and pepper to taste.
    Serve very cold with chives on the cheese.
