    Encurtido de Mango (Hot Pickled Mango Relish)

    Unlike an Indian style mango chutney that includes cinnamon, cloves or other sweet spices, this Encurtido de Mango is simple, straight forward and offers a taste of the Caribbean.

    vegetable oil

    cup
    chopped onion
    1
    bell pepper, seeded and chopped

    pounds
    green mangoes, peeled, seeded and chopped
    1/2
    cup
    white vinegar
    2
    tablespoons
    packed brown sugar
    2
    fresh jalapeños or chile Serrano, minced (optional)

    kosher salt, to taste
    Directions
    Heat the vegetable oil in a small saucepan. Add the onions and bell pepper, and sauté over medium heat until translucent, about 5 minutes.
    Stir in the remaining ingredients and 1/2 cup water and bring to a simmer. Allow to bubble for about 15 minutes, until the liquid is reduced. Stir occasionally so the mixture doesn’t scorch.
    Remove from heat, cover, and allow to cool overnight. Serve the next day, or transfer to a storage container and store in the refrigerator until ready to use.
