    Dulce de Leche and Coconut Bars (Cocadas de Arequipe)

    Cocadas are a popular Colombian dessert made with shredded coconut. There are many variations of Cocadas, dependent on the area of Colombia. This variation is made with arequipe, a traditional Colombian caramel sauce.


    Ingredients

    sweetened shredded coconut
    Directions
    Preheat the oven to 350 degrees F.
    Spray an 8 by 8-inch baking dish with cooking spray.
    In a medium bowl mix the coconut and dulce de leche until well combined.
    Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan.
    Bake for about 20 to 25 minutes, until very lightly browned.
    Cool for at least 1 hour before cutting into squares. Serve at room temperature.
