    Drunken Calabaza Chili

    This Drunken Calabaza Chil packs pumpkin in more ways than one with its mix of pumpkin, pumpkin beer, sweet red pepper and tomato. The hint of cayenne is a spiced up special ingredient you can tailor to your own level of heat.


    Ingredients

    sweet red pepper, diced

    garlic, minced

    pumpkin beer
    1 1/2
    cups
    pinto beans

    can
    pumpkin puree (14 ounces)

    cup
    crushed tomatoes

    teaspoons
    ground ancho chili
    1
    teaspoon
    ground cayenne

    tablespoon
    Olive Oil

    tablespoons
    parsley, chopped

    salt and pepper to taste
    Directions
    Turn crockpot on high.
    Heat a sauté pan on medium-high heat and add olive oil. Add garlic, onion and red pepper. Cook until onion is translucent and peppers have softened.
    Transfer vegetable mixture to crockpot. Add remaining ingredients to crock pot. Stir to combine. Adjust salt and pepper to taste.
    Cook on high for 3 hours.
    Serve warm, garnished with chopped parsley.
