    Dried Tomatoes with Fresh Herbs (Tomates Secos con Hierbas Frescos)

    Forget sundried tomatoes and make your own. Fresh, sweet tomatoes are tossed with earthy herbs like thyme and cilantro and roasted until intense and flavorful.

     


    Ingredients

    tomatoes

    handful
    cilantro

    pinch
    salt and freshly ground pepper

    white sugar

    cloves
    garlic

    Olive Oil

    thyme, to taste
    Directions
    Wash tomatoes and slice into a third of an inch. Place on a tray.
    Add chopped herbs and garlic.
    Season with salt, pepper, and sugar.
    Bake at 200 to 220 degrees for 2 to 3 hours, until tomatoes are dried and roasted.
    Store the tomatoes in olive oil in a tightly closed container.
