    Cucumber Mint Spritzer with Torrontés

Torrontés, a popular Argentinean export, is a great pairing for this light and refreshing summer mix. Dry and crisp, it allows the flavors of cucumber and St. Germain, an elderflower liqueur, to cut through the wine. It’s a perfect beverage for lounging in the cool summer twilights pool, lake or beachside.

    Ingredients
    1/2
large cucumber, peeled and finely diced
    2
    tablespoons
    chopped mint
    1
    tablespoon
    honey
    1/4
    cup
    St. Germain
    1
750-ml bottle chilled Torrontés or other dry white wine
    1
    12-ounce can seltzer
    *
    ice cubes
    Directions
Mix together cucumber, chopped mint and honey in a bowl. Use a fork or pestle to smash cucumber and release its juices. Let stand for at least 30 minutes.
Fill 4 mason jars or other 16-oz tumblers with ice. Divide cucumber mixture among glass. Add one tablespoon of St. Germain to each glass.
Divide wine equally among glasses and top with seltzer to fill glasses. Serve and enjoy immediately.
