    Crispy Pumpkin Coconut Granola

    Creamy pumpkin, sweet coconut, aromatic cinnamon, and crunchy walnuts come together in this Crispy Pumpkin Coconut Granola, perfect for breakfast or a mid-day snack.

    pumpkin puree
    1/4
    coconut oil, melted
    1/2
    cup
    agave
    3 1/4
    cups
    rolled oats
    1 1/2
    cups
    walnuts
    1/2
    cup
    unsweetened coconut shreds

    pinch
    sea salt
    1
    teaspoon
    cinnamon
    1
    teaspoon
    vanilla
    1
    teaspoon
    ginger
    Directions
    Preheat oven to 330F. Line baking sheet with baking mat and set aside.
    Combine all ingredients in a bowl and stir until thoroughly mixed. Transfer granola mixture to baking sheet. Press granola down firmly with back of spatula or hands. Transfer baking sheet to oven and bake for 30 minutes.
    Stir granola, press down firmly once more with back of spatula and return to oven. Lower temperature to 275 and bake for an additional 20 minutes. Allow granola to cool completely before breaking up and storing or enjoying.
