    Creamy Cilantro Turkey Over Coconut Rice

    This recipe takes leftover turkey and turns it into a comfort meal. The turkey is served over a tropical, coconut-scented rice and smothered in a smooth sauce of heavy cream, coconut milk, and earthy cilantro. 


    Ingredients

    heavy cream

    fresh cilantro, packed and chopped

    turkey breasts, cooked
    Directions
    In a medium sauce pan combine 1 cup coconut milk and water over medium heat. Cook rice according to manufacturers direction in coconut milk and water mixture. Fluff with fork and set aside.
    Meanwhile, in another sauce pan melt butter over medium heat.
    Sauté onion until translucent, then add flour. Stir until flour bubbles, then stream in heavy cream and 1/4 cup coconut milk whisking continuously.
    Once thick add salt and pepper to taste. Fold in cilantro and remove sauce from heat.
    Warm turkey breasts in a sauté pan with a little bit of water. Once hot, remove from heat and slice at an angle.
    To plate, serve 1/2 cup of coconut rice and top with one sliced turkey breast. Spoon cilantro sauce over top and serve hot.
