    Creamy Champagne Quinoa

    Creamy Champagne Quinoa takes your left over bubbly and combine it with onion, red chili flakes, parmesan, lemon, and spinach for a hearty, tasty and effortless one pot meal.

    quinoa, rinsed

    cups
    champagne

    cups
    vegetable stock

    cups
    spinach, packed
    5
    ounces
    parmesan, shredded

    orange, zested

    Salt and pepper, to taste
    Directions
    In a large sauce pan or pot, melt coconut oil over medium heat. Add onion, red chili flakes and quinoa. Sauté, stirring occasionally, until onion is translucent and quinoa is toasted.
    Add champagne and continue stirring until it is completely absorbed. Pour in vegetable stock, cover and simmer for 15 minutes. Add spinach, stir until wilted, then cover again cook another 15-20 minutes or until cooked through.
    Fold in parmesan cheese and orange zest, then season with salt and pepper to taste. Serve hot with an additional sprinkle of parmesan on top.
