    Cream of Black Bean Soup

    A quick and healthy soup weighing in at 62 calories a serving—and only and .25 gram of fat!

    Ingredients
    1/2
    chicken bouillon cube
    1/2
    green bell pepper, finely chopped
    1
    small onion, finely chopped
    1/4
    teaspoon
    ground cumin
    1/2
    teaspoon
    dried oregano
    1
    bay leaf
    2
    cans
    unseasoned black bean puree
    1
    tablespoon
    balsamic vinegar
    1
    teaspoon
    sugar
    Directions
    In medium saucepan, combine 1- cup water and bouillon cube and bring to a boil. Stir to dissolve the bouillon cube.
    Add bell pepper, onion, cumin, oregano, and bay leaf. When onion softens, add 1 - cup water. Add black bean puree and mix well. Cover and cook over low heat for 20 minutes. Stir in vinegar and sugar. Cover and cook 5 more minutes. Serve hot.
