    Crab Causa

    A traditional Peruvian dish gets a colorful new twist with crab and fried kale.

    beets and potatoes, cooked and mashed together

    avocado (diced to tartar consistency)

    crab meat
    2
    ounces
    avocado aioli

    ounce
    huancaina sauce

    cherry tomatoes (sliced in quarters)

    quail eggs

    handful
    kale, deep fried
    Directions
    Divide potato and beet mash evenly into 2 cylinders and plate. Top each with avocado tartar, crab meat, and slices of cherry tomatoes. Drizzle with avocado aioli, garnish with fried kale and quail egg. Finish plating with huancaina sauce, green oil, and micro greens.
