    Coconut Rumba Paleta

    Looking for a way to beat the heat? Look no further than the Coconut Rumba Paleta. Creamy coconut milk is spiked with rum, a sprinkling of raw sugar and a healthy drizzle of dulce de leche making a simple treat a grown-up delight.


    Ingredients

    canned coconut milk

    white rum

    raw sugar

    tablespoons
    dulce de leche, plus extra for drizzling
    4
    wooden popsicle sticks
    Directions
    In a large bowl combine coconut milk, rum, sugar and 2 tablespoons of dulce de leche. Whisk until ingredients are evenly distributed and sugar has dissolved.
    Divide mixture evenly among 4 individual paleta molds. Transfer to freezer for 1 hour.
    Add 1 tablespoon of dulce de leche to each mold. Using one at a time, pierce the center of a paleta with a wooden popsicle stick and push down half way. Repeat with remaining popsicle sticks and paletas.
    Return popsicles to freezer. Freeze until solid. Serve with an extra drizzle of dulce de leche.
