    Coconut Cachapas

    Craving something sweet, filling and full of flavor? Cachapas, traditional Venezuelan sweet corn cakes, are given a lift with coconut milk, coconut spread and bits of fresh steamed corn for a treat that can’t be beat.

    P.A.N. mezcla dulce

    cup
    coconut milk
    1/2
    cup
    water
    1
    teaspoon
    coconut spread
    1/2
    cup
    cooked corn kernels
    Directions
    Preheat a skillet on medium-high heat.
    In a small bowl melt coconut spread in microwave, about 10 seconds. In a medium bowl add all ingredients and stir until thoroughly combined.
    In the skillet pour 1/4 cup of batter per cachapa. Like pancakes, cook until the bottom forms a golden crust. Flip cachapa and cook until golden.
    Repeat with remaining mixture.
