Preheat oven to 350 degrees. Grease an 8 x 8 pan with butter or cooking spray.
Make the simple syrup: In a small bowl, combine two tablespoons of sugar and one tablespoon of water. Heat in a microwave for about a minute (or on the stove) until sugar is completely dissolved into water and a syrup has formed. Keep warm until ready to mix.
In separate bowls, combine dry ingredients, up to shredded coconut. Mix wet ingredients, including simple syrup, and whisk together until combine. Add wet ingredients to dry using a rubber spatula until completely absorbed. Mixture will be crumbly.
Press oat mixture into the pan, applying pressure to pack the dough into the pan. Bake for 30-40 minutes, or until golden brown. The mixture will still feel a little soft to the touch. Let cool completely; putting the pan in the refrigerator helps with this.
Once cool, cut into nine pieces, or to desired size. Stores in the fridge for up to two weeks.
