    Clay Oven Octopus Ceviche

    The Clay Oven Octopus Ceviche is a simple dish based on freshness of ingredients. Perfect for summer, this popular Peruvian dish combines raw octopus fresh off the boat with fresh lime juice, red onion, salt and the Peruvian aji chili for a delicious blend of flavors and textures.

    fresh, raw octopus, cubed

    medium red onion, thinly sliced

    garlic cloves, minced finely

    aji limo pepper, deseeded and finely chopped

    cup
    fresh squeezed and strained lime juice

    tablespoon
    fresh cilantro, chopped

    coriander powder

    salt and white pepper to taste
    Directions
    On a clean surface cut the seafood into small, uniform pieces. Mix lime juice, garlic, chilies, salt, coriander and pepper.
    Add the mix to seafood, then add the onions and cilantro. Toss well to serve.
    Pair with slice of cooked sweet potato or corn on the cob.
