    Chorizo Bocadillo

    This bocadillo blows all other lunches out of the water: a crisp baguette is topped with spicy smoky chorizo, plump and juice tomato slices, and shreds of crunch lettuce. 


    Ingredients

    Olive Oil

    Mexican chorizo, cut into 1-inch chunks
    *
    salt and pepper to taste
    *
    baguette, sliced in half lengthwise

    cup
    shredded lettuce
    2
    beefsteak tomatoes, sliced
    Directions
    Preheat oven to 350 degrees F.
    In a medium sauté pan heat one tablespoon of olive oil, add in diced chorizo, and season with salt and pepper. Cook chorizo for about 10 minutes until crisp.
    Brush baguette with olive oil and bake until golden brown about 5-10 minutes.
    Add lettuce, tomatoes, and chorizo to one half of the baguette. Top with other half of the baguette, slice in quarters, and enjoy!
