    Chorizo and Bell Pepper Pinchos

    These pinchos are a great no fuss dish. Just throw together a few ingredients and heat on an indoor or outdoor grill. And since the veggies are included, no need for a side!


    Ingredients

    chorizo
    4
    yellow onions, cut into 2-inch chunks
    4
    large bell peppers, seeds and ribs removed, cut into 2-inch chunks

    salt and pepper to taste

    Directions
    Soak your skewers in ice-cold water for 15 minutes while you prep the vegetables.
    Cut your chorizo into 2-inch chunks. Cut your onions and peppers into 2-inch chunks and set aside.
    Thread one piece of chorizo, one piece of pepper, and one piece onion towards the bottom of the skewer. Continue threading the skewer until you get to the top alternating between the chorizo and veggies. Season skewers with salt and pepper.
    Add one tablespoon of olive oil to a medium high heat grill pan. Cook the chorizo skewers for 8-10 minutes turning halfway through the cooking time. Take of the grill and let rest for five minutes.
