Beat together in the bowl of a mixer, butter, granulated sugar and brown sugar until thick and lightened.
Now add the eggs 1 at a time, scraping down the sides between additions and incorporate the vanilla.
Slow down the mixer and add the dry ingredients. Fold in the crushed crunchy bars and chocolate chips.
Line a sheet tray with parchment paper and scoop 1.5 oz portions (round ball) and bake for 350 degree oven for 10-14 minutes.
Slightly soften ½ gallon of vanilla ice cream.
In a half sheet tray place parchment paper down and then stuff the (pre-baked and cooled) cookies with a scoop of ice cream and compress to a sandwich.
Once all cookies are stuffed place back in the freezer to harden ice cream again.
