    Chipotle Tomato Ranchera Sauce

    This spicy tomato condiment, easily made from two pantry staples: chipotle chiles in adobo and canned stewed tomatoes, is a quick way to add flavor to eggs, fish, chicken, beef or just about anything else!


    Ingredients

    to 3 chipotle peppers in adobo

    Olive Oil

    medium onion, finely diced

    garlic, minced

    14-ounce can stewed tomatoes
    Directions
    Finely mince chipotle peppers, making sure to reserve adobe sauce. You can also use a mortar and pestle or mini food processor to mince.
    In a small saucepan, heat oil over medium heat. Add onions and garlic; sauté until fragrant and translucent, about 5 minutes.
    Add stewed tomatoes and chipotle and bring to a simmer. Season with salt, cover and turn down heat. Simmer for 15 minutes. Serve immediately.
