    large bolillo roll or other soft roll

    Directions
    Heat a waffle iron. Combine the chicken and salsa in a small bowl.
    Cut the roll in half and spread the chicken mixture onto one side of the roll. Crumble goat cheese over the chicken and then top with the onion slices. Place the other half of the roll on top and transfer to the hot waffle iron.
    Close the lid, pressing gently, and cook until cheese is melted and bread is toasted, about 5 minutes. Let cool for a minute or two before serving.
