Season chicken with salt, pepper, garlic, and onion powder; set aside.
Cook the spinach: In a sauté pan heat 1 tablespoon of olive oil on medium high heat. Add spinach and season with salt, pepper, and garlic cloves. Cook for three to five minutes stirring occasionally until the spinach wilts; set aside.
Cook the chicken: In the same sauté pan add another tablespoon of olive oil and add seasoned chicken to pan. Cook chicken on medium high heat for ten minutes stirring occasionally until the chicken is browned on all sides. The chicken is cooked when you cut into a piece and the juices run clear.
In a large bowl mix together the cooked chicken, spinach, cream cheese, sour cream, salsa, cheddar cheese, and cilantro until all of the ingredients are well incorporated.
Add a few tablespoons of the chicken mixture to each tortilla and roll; continue until all taquitos are made.
Add two tablespoons of olive oil to a frying pan on medium heat. Add rolled taquito to the pan and cook on each side until golden brown, about one minute. Serve taquitos with additional sour cream and salsa.
