    Cherry Jubilee Pizza

    We're turning a beloved dessert into a savory dish: the Cherry Jubilee Pizza. This pizza has layers of caramelized onion, goat cheese, crispy bacon, and sweet cherries made jubilee style with rum.

    For the Cherries Jubilee

    molasses

    cherries, pitted

    teaspoon
    freshly squeezed lemon juice
    Directions
    Make the pizza dough: In the bowl of a stand mixer fitted with the hook attachment combine bread flour, olive oil, yeast, and sugar.
    Mix until thoroughly combined. Drizzle in water and continue to beat on speed 2 until it separates from the bowl.
    Remove dough from bowl and knead by hand, using additional flour as necessary, until soft and pliable. Place in an oiled bowl and cover with a dish cloth for 30 minutes, until doubled in size.
    Preheat oven to 425 F.
    Make cherries jubilee: In a sauce pan on medium heat add butter, sugar, molasses, cherries, salt, and rum. Stir until sugar has dissolved.
    Continue to stir until thick, about 12 minutes. Add fresh lemon juice and cook for an additional 2 minutes, then set aside.
    Roll out dough to desired thinness. Place on baking sheet, drizzle with olive oil, and bake for 8 minutes.
    Remove pizza from oven and top with caramelized onion, goat cheese, bacon, and cherries.
    Return pizza to oven for an additional 8-10 minutes, until crust is crisp and golden. Garnish with chopped parsley and serve hot.
