    Chard Croquette (Croquetas de Arroz Integral and Acelga)

    Brown Rice Chard Croquette (Croquetas de Arroz Integral and Acelga) is a dish that differs greatly from your typical fried croquette. This lighter version is made up of small balls the size of a walnut and is baked with olive oil.


    Ingredients

    Swiss Chard

    light ricotta cheese

    parmesan cheese

    teaspoon
    nutmeg, freshly grated

    cups
    brown rice

    egg

    tablespoons
    organic breadcrumbs (also 7 ounces extra to cover croquettes)

    Chopped Garlic

    fresh parsley

    salt and freshly grounded black pepper

    Crushed red pepper (to taste)
    Directions
    Wash the swiss chard and pinch off the leaves at the top of the stem. Discard the stems.
    Chop the garlic cloves.
    Heat 2 tablespoons of olive oil in a skillet. Add the chopped garlic.
    Add in the chopped chard in the skillet.
    Reduce heat to medium and cook until pieces are tender.
    Introduce into the skillet the ricotta, the Parmesan cheese, salt, black pepper, nutmeg, and crushed red pepper.
    Stir and adjust the seasoning to taste.
    In a bowl, place 3 1/2 ounces of chard filling and 1 1/2 cups of brown rice, an egg and 2 tablespoons of breadcrumbs.
    Mix the 7 ounce- breadcrumbs with garlic and parsley, salt and black pepper.
    Cover each ball with breadcrumbs.
    Heat 2 tablespoons of olive oil in a skillet. Add small balls of croquettes and cook them until they turn lightly brown.
