    Chacarero Sandwich

    This colorful sandwich uses ingredients from the farm (chacra) to give it its signature look. Julienned string beans, saucy tomatoes and sliced hot peppers top fresh-cooked steak or turkey to make this Chilean favorite.

    vegetable or olive oil, plus extra for drizzling

    julienned string beans

    ounces
    thin-sliced boneless steaks or turkey breast

    hearty rolls or french bread

    hot pepper, such as ají cristal, ají amarillo or jalapeno, thinly sliced in rounds, seeded if desired

    Fine salt, to taste
    Directions
    Slice the tomatoes and place them in a small bowl with a light drizzle of oil and a pinch of salt. Toss and set aside. Steam or boil the string beans until tender. Cool.
    Heat 1 tablespoon of oil in a skillet over medium heat. Add the meat and cook, turning, until just cooked through.
    Slice the bread and make a small cavity in the top of the bun to fit the toppings. Layer the meat on the roll or bread. Pile on sliced tomatoes and then the string beans.
    Add rounds of hot peppers, to taste. Lightly drizzle the sandwich with oil and sprinkle with a pinch of salt.
    Cap the sandwich with the top of the roll.
