    Ceviche Mixto

    This ceviche mixto is a classic Peruvian recipe. Shrimp, fluke, and octopus are "cooked" in a marinade of lemon, lime, and celery juices spiked with fresh cilantro and crushed red pepper. Open a bottle of wine and you have dinner. 


    Ingredients

    red onion, thinly sliced

    lemon juice

    Lime Juice

    celery juice

    Chopped Cilantro

    teaspoon
    crushed red pepper
    4
    tiger shrimp

    fluke fillet
    1
    octopus tentacle
    1
    sweet or purple potato (either boiled or made into chips)
    Directions
    Soak the red onion in ice water and 1 tablespoon salt for about 5 minutes. Rinse and set aside.
    Mix lemon, lime and celery juice. Add salt, onion, cilantro, and crushed red pepper. Set aside.
    Slice the fluke, octopus, and shrimp to the same size. Add the shrimp to the lemon juice mix. Wait 4 minutes and then add fluke and octopus. Let marinate for 4 minutes.
    Serve with potato.
