    Carne Mechada Quesadillas

    Carne Mechada Quesadillas make use of that extra flank steak you have, adds a heap of habanero jack cheese and nestles both between two toasty flour tortillas for an easy meal that is filling, tasty and, most importantly, quick!

     


    Ingredients
    4
    flour tortillas (6-8 inch diameter)
    1
    cup
    grated habanero jack cheese
    2
    cups
    shredded cooked flank steak
    2
    tablespoons
    chèvre (goat cheese)
    Directions
    Preheat pan on medium heat.
    Warm a tortilla on the pan, just enough for it to become pliable.
    Spread 1/2 tbsp chèvre on half of tortilla, top with 1/2 cup flank steak and 1/4 cup habanero jack cheese. Fold over other half of tortilla to create a half-circle quesadilla.
    Keep on pan until tortilla becomes crisp, flip, and cook again until edges are crisp, about 5 minutes.
    Transfer to cutting board and allow to cool slightly before slicing in half.
    Repeat steps with remaining filling and tortillas.
