    Caribbean Dreamsicle Vodka Cocktail

    Don’t be fooled by this surprisingly smooth and sweet treat, it looks like dessert but it's fit for cocktail hour. It's made with a tropical pineapple infused vodka and topped off with vanilla ice cream, it is summer after all. 

     


    Ingredients
    Pineapple Vanilla Vodka

    For the Cocktail
    1 1/2
    ounces
    pineapple vanilla vodka
    3/4
    ounce
    tuaca
    1/2
    ounce
    cointreau
    2
    ounces
    orange juice
    1/2
    cup
    vanilla cream
    *
    whipped cream, orange wedge for garnish
    Directions
    Make the pineapple vanilla vodka: Rinse the pineapple thoroughly, lay it on its side, and slice off the top and bottom. Stand the pineapple upright and cut the skin off the sides in strips, starting at the top. Lay the remaining cylinder of pineapple flesh on its side and cut it into 1- to 2-inch slices. Quarter the slices and place them in a large glass jar. Score each vanilla bean lengthwise to release the flavor. Place the vanilla beans into the jar, add the vodka, and seal tightly. Let stand on a counter, out of direct sunlight, for at least 1 week, stirring daily. Makes approximately 2 liters.
    Make the cocktail: In a blender, combine the vodka, Tuaca, Cointreau, orange juice, ice cream, and 1 ¼ cups of ice. Blend on high until smooth, then pour into a Collins glass. Top with whipped cream, garnish with an orange wedge, and serve with a straw.
