    Campbell's® Calabacita Squash Stuffed with Carne Guisada

    Tender, sweet calabacita squash, also known as Tatuma squash, are filling and hearty when stuffed with a traditional beef and vegetable guisado. This light recipe works especially well for busy office folks who need a quick, microwavable take-along lunch that fits their budget.

    small tomato, about 3 ounces, chopped - about 1 cup

    cooked, leftover beef, shredded - about 1 cup

    (10 3/4 ounces) Campbell's® Healthy Request® Condensed Vegetable Beef Soup

    long calabacita squash, or zucchini, cut in half lengthwise
    Directions
    Heat the vegetable oil in an 8” skillet, and add the green onions and whole chile Serrano. Sauté over medium heat until the vegetables are well browned, about 2 minutes.
    Add the tomato and beef, and continue to stir for another minute. Stir in Campbell's® Healthy Request® Condensed Vegetable Beef Soup and water, and stir to combine well. Allow to simmer for 5 minutes, stirring occasionally.
    Meanwhile, fill a 1 ½ qt saucepan with water and bring to a boil. Add the halved calabacita squash, and boil for 5 minutes, until the squash are just tender. Remove from the heat, drain the water, and allow to cool for 5 minutes.
    Using a spoon, scrape out the center seed core, giving the squash a hollow center. Discard the seeds, or stir into the carne guisada, if you like.
    Remove the chile Serrano and discard. Place the two halves of the squash together to form a boat, and fill with the carne guisada. Serve hot.
