Heat the vegetable oil in an 8” skillet, and add the green onions and whole chile Serrano. Sauté over medium heat until the vegetables are well browned, about 2 minutes.
Add the tomato and beef, and continue to stir for another minute. Stir in Campbell's® Healthy Request® Condensed Vegetable Beef Soup and water, and stir to combine well. Allow to simmer for 5 minutes, stirring occasionally.
Meanwhile, fill a 1 ½ qt saucepan with water and bring to a boil. Add the halved calabacita squash, and boil for 5 minutes, until the squash are just tender. Remove from the heat, drain the water, and allow to cool for 5 minutes.
Using a spoon, scrape out the center seed core, giving the squash a hollow center. Discard the seeds, or stir into the carne guisada, if you like.
Remove the chile Serrano and discard. Place the two halves of the squash together to form a boat, and fill with the carne guisada. Serve hot.
