    Cafe Maya

If you’re throwing a dinner  party for the adults while the kids are trick or treating on Halloween, then give your group a thrilling surprise with this flaming after dinner drink. Created by La Habichuela restaurant, a Cancun institution, it's a delicious mix of coffee, ice cream, brandy, and anise-flavored xtabentum liqueur.

    Ingredients
    *
    scalloped half of an orange
    2
    tablespoons
    sugar
    1
    cup
    coffee
    3/4
    ounce
    Xtabentun Mayan Liqueur
    3/4
    ounce
    brandy
    1
    scoop
    vanilla ice cream
    Directions
Moisten the rim and about an inch of the goblet by rubbing it in the orange. Roll the rim of the glass in sugar.
Warm a goblet and two sauce boats gently with a cooking torch.
Pour the coffee in the cup leaving two inches for the liqueurs.
Pour the xtabentun and the brandy into one of the sauce boats and light the spirits using the torch. Pour the flaming spirits from one sauce boat into the other, then into the goblet.
Carefully spoon the ice cream into the coffee so that it floats and begins to melt. Do not stir.
