    Brussels Sprouts Pizza

    Forget about calling for pizza delivery and try this Brussels Sprouts Pizza! A hearty whole wheat crust is topped with a jalapeño avocado cream, crispy bacon, and sprinkled with sliced roasted Brussels sprouts and caramelized onions.


    Ingredients
    For the Pizza Dough

    For the Pizza
    4

    uncured bacon

    cup
    Thinly sliced onions

    ripe avocados

    tablespoon
    minced jalapeño
    1
    tablespoon
    avocado oil
    1/2
    teaspoon
    ground black pepper

    cup
    roasted Brussels sprouts, sliced
    Directions
    To make the pizza dough combine the flours, olive oil, yeast, and sugar in the bowl of a stand mixer fitted with the dough hook attachment. Mix on the lowest setting, slowly adding the warm water until a soft dough forms. Add the salt. Continue to beat with hook for another minute to ensure dough has been thoroughly kneaded.
    Transfer the dough to a lightly floured surface and knead until smooth and pliable. Spray the dough with a bit of cooking spray, place in a medium bowl and cover with a towel. Place bowl in a warm place to rise for 30 minutes.
    To make the pizza, preheat the oven to 425F. Meanwhile, in a skillet set over medium-high heat cook bacon until very crispy. Chop and set aside.
    Drain oil from pan and return to stovetop. Add onion and cook until caramelized. Set aside.
    In a small bowl mash the avocado, jalapeño, 1/2 tablespoon avocado oil and pepper until a smooth cream forms. Set aside.
    Roll the dough on a lightly floured surface to a 9x12-inch rectangle and place on a lightly greased baking sheet. Brush dough with remaining avocado oil. Transfer to oven and bake for 10 minutes.
    Remove crust from oven. Spread avocado cream evenly on crust, then top with caramelized onion, bacon and Brussels sprouts.
    Return to the oven for 3 to 5 minutes. Serve warm.
