    Beef Tongue Tacos

    Don't be startled! Beef tongue, though it may sound unusual, is a classic taco filling, usually eaten for breakfast. Here, it's cooked in a slow cooker until fall apart tender and tucked into warm corn tortillas. 


    Ingredients

    cilantro, chopped

    limes, cut into wedges

    salsa of your choice
    Directions
    Wrap beef tongue in a piece of aluminum foil. In the bowl of a slow cooker, place water and kosher salt and stir to dissolve.
    Add beef tongue bundle and turn temperature on to the “Low” setting. Cover and let cook for at least 8 hours, and up to 12.
    Remove foil packet from slow cooker, making sure to drain any liquid. Place beef tongue on cutting board and start to peel away the tough outer skin.
    Once it’s peeled, start shredding the meat with two forks. Remove any veins or gristle it may have.
    Place shredded meat on a platter and serve very warm to make tacos with corn tortillas, chopped onion, chopped cilantro, limes and salsa.
