    Barley and Fava Bean Soup

    Barley and Fava Bean Soup is a traditional Colombian soup that is comforting and filling and packed with carrots, peas, potatoes, barley and fava beans.


    Ingredients

    chopped onion

    diced red pepper

    scallions, chopped

    vegetable, chicken or beef broth

    fresh peeled fava beans
    1/2
    cup
    barley, soaked for at least 1 hour and drained

    medium yellow skinned potatoes, peeled and cut into large chunks

    fresh or frozen peas
    1/2
    cup
    diced carrots
    1
    teaspoon
    ground cumin
    1/2
    cup
    chopped fresh cilantro

    kosher salt and freshly ground black pepper
    Directions
    Place the onion, red bell pepper, scallions and garlic in the food processor and grind until almost smooth.
    Place a pot over medium-high heat. Add the broth, fava beans and barley and bring to a boil.
    Reduce the heat to medium-low. Add the onion mixture and season with salt and pepper. Simmer for about 50 minutes.
    Add the potatoes, peas, carrots and ground cumin. Cover and cook until the vegetables and beans are tender, about 25 minutes more. Stir in the cilantro.
