    Banana Crusted Huachinango

    Ortega's, A Mexican Bistro serves original specialties from Puerto Nuevo, Mexico including Banana Crusted Huachinango with red snapper, ripe plantain and crispy corn chips.


    Ingredients
    Banana Crust

    butter

    red bell pepper, minced

    plantains, ripe and minced
    1
    shallot, minced
    1/2
    lemon, squeezed
    2
    quarts
    corn chips
    1/2
    cob of corn, minced
    Huachinango
    4
    six-ounce fresh snapper filets

    fried plantain chips
    Directions
    For the plantain crust, blend all ingredients in food processor until mixture is smooth. Set aside.
    For the snapper, first lightly grease a large griddle or flat top and set to medium heat.
    Place four 6-ounce fresh snapper filets on top.
    Evenly spread approximately 4 ounces of the plantain crust on top of each filet.
    Cook for 3-4 minutes, then turn the filet’s over, cooking the crust side down for another 3-4 minutes.
    Remove from griddle and garnish with fried plantain chips.
