    Bacon Guacamole Grilled Cheese

    Chef Manuel Trevino at Marble Lane restaurant in New York City spices up the typical grilled cheese by adding his favorite childhood ingredients: guacamole and chihuahua cheese. He loads these onto the sandwich with staples like cheddar, tomato, and bacon to make this the ultimate grilled cheese sandwich for kids and adults alike!

    Texas toast (or other thick-cut white bread)

    butter

    cheddar cheese

    pickled jalapeno, sliced

    Chihuahua cheese

    slices
    American cheese

    slices
    bacon
    2
    slices
    tomato

    tablespoons
    guacamole
    Directions
    Butter both sides of both pieces of white bread. Place on a griddle over medium heat to toast both sides.
    Top each slice with one slice of cheddar, diced jalapenos, Chihuahua cheese, and American cheese in that order.
    Place into a hot oven, open faced, for 3 minutes or until cheese is melted.
    Meanwhile, griddle the bacon until crisp, remove (leave rendered bacon fat in pan).
    Place tomato slices in pan to grill in rendered bacon fat and remove after desired doneness is reached.
    Place the tomato over one of the slices of bread and cheese. Place the bacon on top of the tomato.
    Smear guacamole over the other slice of cheesy bread.
    Assemble the sandwich by placing the guacamole side on top of the tomato bacon side. Secure with sandwich pick and cut in half with serrated knife.
