    Avocado Fries with Scallions

    These crisp fries skip the potato and instead use thick slices of avocado. They're dipping in an egg bath then in a breadcrumb mix, pan fried until crispy and golden, then topped with tangy scallions. 


    Ingredients
    1
    egg, lightly beaten (or 1 tablespoon ground flax seed with 3 tablespoons water
    1/2
    cup
    breadcrumbs
    1/2
    teaspoon
    salt
    1
    teaspoon
    onion powder
    1/2
    teaspoon
    cayenne pepper

    firm ripe medium avocados
    *
    neutral tasting oil for pan frying
    4
    scallions, thinly sliced, white and light green parts only
    Directions
    Mix the egg or flax egg in a shallow dish. In another shallow dish mix bread crumbs through cayenne pepper.
    Slice the avocado and dip each slice in the egg and then in the bread crumbs.
    Pan fry until golden, flipping once. Drain on paper towels, top with scallions. Serve immediately.
