Make the avocado feta dip: Add one tablespoon of olive oil to a sauté pan over medium high heat. Add red onion, jalapeño, salt, and pepper, and cook until soft and browned, about five minutes. Set aside and let cool. Add to your food processor with avocados, lime juice, and 1/4 cup feta cheese; season with salt and pepper, to taste. Puree avocado mixture until smooth streaming in two tablespoons of olive oil as the processor is pureeing. Add avocado feta dip to a bowl and top with more feta.
Make the tortilla chips: Heat one-inch of canola oil in a large frying pan to 300 degrees F. Arrange tortillas evenly on top of each other and cut into 8 equal triangles like a pizza pie. Once the oil is hot add a few chips at a time to the frying pan and cook for about a minute total, turning with a slotted spoon making sure both sides of the chips are crisp. Remove from the frying pan and drain on a paper towel lined sheet pan. Season chips with salt and garlic powder to taste. Continue until all chips are cooked. Serve immediately.
