    Avocado, Black Bean, and Corn Salsa

    Put this heart-healthy salsa on just about anything and we'll eat it.


    Ingredients
    2
    avocado (peeled, pitted, diced)
    1/4
    cup
    vinaigrette salad dressing
    1/4
    cup
    scallions (sliced)
    1
    can
    black beans (drained and rinsed)
    1
    cup
    corn kernels (fresh or thawed and frozen)
    1/2
    cup
    red pepper (diced)
    Directions
    Cut avocados into 1/2 inch cubes.
    In large bowl, whisk together salad dressing and scallions. Stir in beans, corn and red pepper.
    Add avocado and toss gently.
    To store, place a piece of plastic wrap directly on the surface of the salsa and refrigerate.
